A veritable mosaic of contrasting tastes: light or heavy, sweet or sour, simple or elaborate; to be enjoyed at a street stall or at a gala dinner table: “Sopa de Lima” (lime soup, with shredded chicken), “Huevos Motuleños” (fried eggs with tomato sauce, ham, peas and cheese, served with slices of fried bananas), “Cochinita al Pibil” (pork marinated in achiote, orange juice, garlic and cumin, wrapped in banana leaves), and “Panuchos” ( tortillas stuffed with black beans).   • Cochinita Pibil. Pork meat seasoned with achiote (a spicy local sauce) and slowly roasted in a ground oven
  • Pipian sauce. A kind of mole sauce but its main ingredient is pumpkin seeds. This delicious sauce is also served on top of pork or chicken meat with rice.
  • Papadzules. Tacos stuffed with hard-bolied eggs.
  • Poc Chuc. Pork meat marinated with sour orange juice.
  • Ticuleño Chicken. Chicken meat roasted with banana leaves.
  • Queso Relleno (Stuffed Cheese). Dutch cheese stuffed with spicy ground beef, and covered with a delicious white sauce.
  • Xtabentún. Alcoholic beverage distilled from the flower’s nectar of the same name
